At Classic Kitchen Associates we use a variety of pestos in our presentation whether it is traditional basil pesto, Arugula pesto or our dessert Mint pesto. There is one tip that will help you in you presentation.
- Always blanch your greens by first placing them in boiling lightly salted water for about five to 10 seconds.
- Remove your greens and immediately place into an ice-cold water bath.
- Drain the greens and squeeze dry. This will allow you to have a nice green color in your pesto. Without this step pesto has a tendency to turn dark much quicker
